1. Pumpkin Spice Soup

Ingredients:

  • 1 can (15 oz) pumpkin puree
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp pumpkin pie spice
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic; sauté until softened.
  2. Stir in the pumpkin puree, vegetable broth, and pumpkin pie spice. Bring to a simmer.
  3. Add heavy cream and blend if desired for a smooth texture. Season with salt and pepper.
  4. Serve warm, garnished with a dollop of sour cream and a sprinkle of pumpkin pie spice.

2. Cheesy Cauliflower Casserole

Ingredients:

  • 1 head of cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 cup heavy cream
  • 1 garlic powder
  • Salt and pepper to taste
  • Green onions for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Steam the cauliflower until tender. Transfer to a mixing bowl.

3. Slow-Cooker Beef Stew

Ingredients:

  • 2 lbs beef chuck, cut into cubes
  • 2 cups beef broth
  • 2 cups diced mushrooms
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions:

  1. In a slow cooker, combine all ingredients. Stir well to mix.
  2. Cover and cook on low for 6-8 hours or until the beef is tender.
  3. Adjust seasoning as needed before serving.

4. Spiced Apple Cider (Keto-Friendly)

Ingredients:

  • 4 cups unsweetened apple cider (or apple cider vinegar diluted with water)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • Sweetener of your choice (erythritol or stevia recommended)

Instructions:

  1. In a large pot, combine the apple cider and spices. Bring to a simmer.
  2. Sweeten to taste and serve warm with a cinnamon stick for garnish.

5. Chocolate Avocado Mousse

Ingredients:

  • 2 ripe avocados
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup sweetener of choice
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. In a food processor, blend all ingredients until smooth and creamy.
  2. Taste and adjust sweetness if necessary. Chill before serving for a richer flavor.
