– 6 eggs
– 1/2 cup of chopped vegetables (bell peppers, onions, mushrooms, etc.)
– 1/2 cup of shredded cheese
– Salt and pepper to taste

Instructions:
1. Preheat your oven to 350°F.
2. In a mixing bowl, whisk the eggs and season with salt and pepper.
3. Add the chopped vegetables and shredded cheese to the egg mixture and stir to combine.
4. Pour the mixture into a muffin tin lined with muffin liners.
5. Bake for 20-25 minutes or until the egg muffins are set and slightly golden on top.
