Instructions:

  1. Preheat your oven to 450°F (230°C).
  2. Rice the cauliflower in a food processor until it resembles grains.
  3. Steam the riced cauliflower and then squeeze out excess moisture using a kitchen towel.
  4. In a bowl, mix the cauliflower, mozzarella, Parmesan, egg, and Italian seasoning until combined.
  5. Spread the mixture onto a parchment-lined baking sheet, forming a crust.
  6. Bake for 12-15 minutes or until golden brown.
  7. Add your favorite toppings and return to the oven for an additional 10 minutes.

2. Creamy Garlic Mushroom Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook until golden and cooked through; remove and set aside.
  2. In the same skillet, add mushrooms and garlic. Sauté until mushrooms are tender.
  3. Pour in chicken broth and heavy cream, bringing the mixture to a simmer. Allow it to thicken slightly.
  4. Return chicken to the skillet and coat with the sauce. Garnish with fresh parsley before serving.

3. Zucchini Noodles with Pesto

Ingredients:

  • 4 medium zucchinis
  • 1 cup basil pesto (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions:

  1. Using a spiralizer, make zucchini noodles (zoodles).
  2. In a large bowl, toss the zoodles with pesto, cherry tomatoes, salt, and pepper.
  3. Drizzle with olive oil before serving, and top with grated Parmesan.

4. Keto Cheesecake

Ingredients:

  • 16 oz cream cheese, softened
  • 1/2 cup erythritol or another keto-friendly sweetener
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • Almond flour for the crust

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. Mix almond flour with a bit of melted butter to form a crust. Press into the bottom of a springform pan.
  3. In a bowl, combine cream cheese, erythritol, eggs, vanilla, and lemon juice. Blend until smooth.
  4. Pour filling over the crust and bake for about 45 minutes, or until the center is set.
  5. Let it cool before refrigerating for a few hours. Serve chilled.

5. Avocado Chocolate Mousse

Ingredients:

  • 2 ripe avocados
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup coconut milk
  • 1/4 cup erythritol or your preferred sweetener
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. In a blender, combine all ingredients until smooth and creamy.
  2. Taste and adjust sweetness as needed.
  3. Chill in the refrigerator for at least 30 minutes before serving.
