Instructions:

  2. In a bowl, mix almond flour, erythritol, and melted butter until crumbly. Press this mixture into the bottom of a greased springform pan to form the crust.
  3. In another bowl, beat the cream cheese until smooth. Add the sour cream, eggs, vanilla, and lemon zest, and mix until well combined.
  4. Pour the filling over the crust and bake for 50-60 minutes or until the center is set.
  5. Let it cool, then refrigerate for at least 4 hours before serving.

2. Chocolate Avocado Mousse

Ingredients:

  • 2 ripe avocados
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup erythritol or another keto-friendly sweetener
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract

Instructions:

  1. In a food processor, combine the avocados, cocoa powder, sweetener, almond milk, and vanilla extract.
  2. Blend until smooth and creamy.
  3. Adjust sweetness to taste, then refrigerate for 30 minutes before serving.

3. Keto Coconut Macaroons

Ingredients:

  • 2 1/2 cups shredded unsweetened coconut
  • 1/2 cup erythritol
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine shredded coconut, erythritol, egg whites, vanilla extract, and salt.
  3. Mix until well combined.
  4. Drop spoonfuls of the mixture onto the prepared baking sheet and bake for 20-25 minutes or until golden brown.

Ingredients:

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup erythritol
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar-free chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine almond flour, baking soda, and salt.
  3. In a separate bowl, cream together the butter and erythritol, then add the egg and vanilla extract.
  4. Gradually mix in the dry ingredients, followed by the chocolate chips.
  5. Drop spoonfuls onto the baking sheet and bake for 10-12 minutes, or until golden. Let cool before indulging.

5. Keto Berry Sorbet

Ingredients:

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup erythritol or another sweetener
  • 1 cup coconut milk

Instructions:

  1. In a blender, combine the berries, sweetener, and coconut milk.
  2. Blend until smooth and transfer to a container.
  3. Freeze for about 2–3 hours or until firm.
  4. Scoop and serve for a refreshing treat!
