– Salt and pepper to taste

Instructions:
1. In a large mixing bowl, combine the shredded chicken, diced avocado, mayonnaise, celery, red onion, salt, and pepper.
2. Mix until well combined.
3. Serve the chicken salad on a bed of lettuce or with low-carb crackers.

3. Dinner: Keto Cauliflower Mac and Cheese
Ingredients:
– 1 head of cauliflower, cut into florets
– 1 cup heavy cream
– 1 cup shredded cheddar cheese
– 1/4 cup grated Parmesan cheese
– 2 cloves garlic, minced
– Salt and pepper to taste

Instructions:
1. Preheat oven to 375°F.
2. Steam the cauliflower until tender.
3. In a saucepan, heat the heavy cream, garlic, salt, and pepper over medium heat.
4. Add the cheddar and Parmesan cheese and stir until melted and smooth.
5. In a baking dish, add the cauliflower and pour the cheese sauce over the top.
6. Bake for 15-20 minutes or until bubbly and golden brown.
7. Enjoy your keto-friendly mac and cheese!
