1. Keto Chocolate Chip Cookies
Ingredients:
– 2 cups almond flour
– 1/2 cup erythritol or monk fruit sweetener
– 1/4 cup unsweetened almond milk
– 1/3 cup sugar-free chocolate chips
– 1/2 cup melted coconut oil
– 1 tsp vanilla extract
– 1/2 tsp baking soda
– 1/4 tsp salt

Instructions:
1. Preheat your oven to 350°F.

3. Add in the almond milk, melted coconut oil, vanilla extract, and chocolate chips. Stir until well-combined.

2. Keto Lemon Blueberry Muffins
Ingredients:
– 2 cups almond flour
– 1/2 cup erythritol or monk fruit sweetener
– 1/2 cup melted butter
– 3 large eggs
– 1/4 cup unsweetened almond milk
– 1/4 cup fresh lemon juice
– Zest of 1 lemon
– 1 tsp baking powder
– 1/2 tsp salt
– 1/2 cup fresh blueberries

Instructions:
1. Preheat your oven to 350°F and line a muffin tin with paper liners.
2. In a large bowl, mix together the almond flour, sweetener, baking powder, and salt.
3. In a separate bowl, whisk together the melted butter, eggs, almond milk, lemon juice, and lemon zest.
4. Combine the wet and dry ingredients, stirring until just combined. Gently fold in the blueberries.
5. Spoon the batter into the muffin tin, filling each cup about three-quarters of the way full.
6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
7. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
